Best Oil-Free Red Pepper Hummus

Ingredients: (based on HCH's Best Hummus Recipe)

  • 1 15oz can chickpeas

  • 1/2 cup aqau faba

  • 3 garlic cloves

  • 3 tbsp tahini

  • 1 lemon juiced

  • 1/2 tsp salt

  • 1/4 tsp paprika

  • 1/4 tsp cumin

  • 1 whole roasted red pepper (I used Trader Joes jarred)

Drain your chickpeas into a bowl and save the aqua faba (liquid) from the can. Add 1/2 cup of the aquafaba to your blender. You don't want any more than that. Add the rest of the ingredients into your blender. Blend on high for 2 minutes. You want the hummus to be very creamy and fluffy and the trick to that is to blend the heck out of it on as high as you can for the whole 2 minutes. Plate up and serve. You can sprinkle some extra paprika on top for serving. Place in an air tight container and store in the fridge for up to one week.
