Fat Free/Mayo Free Potato Salad


2-3 lb bag of red or yellow potatoes, washed and cut into smaller pieces

(put potatoes into pot of cold water while cutting)

1/3 cup of green onions, sliced thin


1/4 cup red wine vinegar

1/3 - 1/2 cup vegetable broth

1 TBS whole grain mustard

1/4 tsp salt

Pepper to taste

1/16th tsp of liquid smoke hickory flavor

Mix all ingredients and taste for flavor


Cook potatoes on high and bring to a boil. Stir often. Once it boils, turn heat down to med and cook for 5-7 mins, until fork tender. Strain in colander but don't rinse. Add potatoes to mixing bowl, add dressing and mix with slotted spoon. Add sliced green onions and taste for seasonings. Put in fridge overnight and serve the next day.
