Holiday Cranberry Topping

1/2 cup fresh squeezed orange juice

1/4 cup water

1/4 - 1/2 cup maple syrup (to tasted)

12-16 oz. fresh cranberries

fresh zest of 1 lemon

**as a substitute for the maple syrup, you can soak 2 dates in 1/3 cup water for 2 hours and then blend it up***


In a medium saucepan add the orange juice, water, and maple syrup and cranberries and bring to a boil. Once the boiling starts, add the maple syrup and turn heat to low. Cover and simmer for 10 minutes or until the cranberries are soft. Remove from heat and stir in the 3/4 of the lemon zest. Set aside covered, or refrigerate until ready to serve. Garnish with the rest of the lemon zest when serving.
