Taco Pasta Salad (recipe by Kathy Davis)


1 cup frozen corn, thawed

1 pound whole grain pasta

2 cups shredded lettuce

15 oz can black beans, drained and rinsed

1.5 cups chunky salsa

1 cup diced tomatoes

1/2 sliced black olives (I didnt use these because I dont like olives)

3 TBSP taco seasoning mix (see below for How To Make Taco Seasoning recipe)

3 TBSP Freshly squeezed lime juice

1/8 avocado per serving


Cook pasta to manufacturers instructions, drain, rinse and let cool. In a large bowl, mix in the corn, cooled, drained and rinsed pasta, lettuce, beans, salsa, tomatoes, olives, taco seasoning and lime juice. Gently fold to combine. spoon out into serving bowls. Top each bowl with 1/8 avocado if desired.


1 tablespoon chili powder

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/4 teaspoon dried oregano

1/2 teaspoon paprika

1 1/2 teaspoons ground cumin

1 teaspoon salt

1 teaspoon black pepper

Combine in a mason jar and shake well.
