(Modified recipe from “The Vegan Gym”)
2 Ole Xtreme Wellness High Fiber Tortilla Wraps
4 oz (80g) Seitan
Small (60g) red bell pepper
1/2 small carrot (25g)cut into match sticks
2 TBSP Kite Hill French Onion Yogurt Dip
1 cup (30g) baby spinach
2 TBSP Sauerkraut
1 clove garlic minced
1 TBSP tamari sauce
Break the seitan into smaller pieces and place in an air fryer. Cook at 375 degrees for 5 to 7 minutes until crispy depending on how small it was cut. While the seitan is cooking, slice the red bell peppers and chop the broccoli into smaller pieces. Sauté these vegetables in a non-stick pan over medium heat without adding any oil. I added 1 grated garlic clove and 1 TBSP soy sauce Remove from heat when done.
Assemble the wraps by laying out 8 ole high fibre wraps. Spread 1 tablespoon of Kite Hill French onion yogurt dip on each wrap. Add 1 tablespoon of sauerkraut to each wrap. Place ½ cup of spinach onto each wrap. Spread the carrots onto each wrap. Add cooked peppers, to the wraps. Finally, place the seasoned seitan onto each wrap.
Roll up each wrap tightly and slice it in half. Each serving consists of 2 wraps.
