Rainbow Chopped Salad

Dressing Ingredients:

2 TBSP (30g) Apple Cider Vinegar

2 TBSP (48g) Lemon Juice

1/4 cup fresh Parsley (or 1/4 tsp dry)

1/2 cup fresh Oregano (or 1/4 tsp dry)

1/4 tsp Turmeric

1/4 tsp salt

Veggies: (Food processor)

1/2 (35g) red onion

2 medium (122g) carrots

1/4 head (210g) purple cabbage

3 cups (273g) raw broccoli

1 cup (107g) raw cauliflower


In a food processor chop the veggies until they are a fine diced.  Just a few pulses should do it. Dump the veggies into a large mixing bowl

In a small bowl, add the dressing ingredients and whisk well until blended.   Pour the dressing over the veggies and fold together

This whole recipe makes four serving.
