TVP Southwest Protein Taco Bowls

Ingredients

  • 170g (2 cups) Textured Vegetable Protein

  • 2 cups hot water

  • 15oz (420 g) can black beans (drained and rinsed)

  • 8oz (200g) frozen corn

  • 15oz (410 g)can diced tomatoes

  • 1/4 cup cilantro

  • 1 oz (20g) Taco seasoning Mix (I made my own

  • 2 Ole Extreme Wellness high fiber wraps


The recipe macros are based on grams, not imperial measurements.


Instructions:

  1. In a small bowl, add the TVP and hot water, set aside for about 15 minutes

  2. In a skillet, add the TVP and taco seasoning.  Stir together and cook over meds heat.   

  3. Add in the black beans, corn and diced tomatoes

  4. Cook until everything is heated through and the corn is soft.

  5. Turn off heat, top with cilantro

  6. Serve in 2 bowls or taco shells made from 2 extreme wellness tortillas.   Enjoy

Hi Joey, I don't want to be picky, but I am trying to follow along with your high protein vegan plans and am struggling a bit when the recipes don't actually match the chronometer information. For example, this recipe says 8oz (200g) of frozen corn, but you used 132 g in the chronometer which does change the calories. Also, the recipe says 2 tortillas, where it should be 8 since it's really 2 per serving. Anyway, I appreciate that you offer this info for free and I don't know if it bothers anyone else but I sat here struggling with the math for the last 20ish minutes until I figured out what accounted for the differences. Thanks
