Broccoli Crunch Salad


3/4 cup Starch Solution Mayo (from The Starch Solution book & shown below)

1 1/2 TBSP spicy brown mustard

2 TBSP maple syrup

salt and pepper to taste

Mix all ingredients in small bowl and set aside


1 med head of broccoli

1-2 carrots grated

2 stalks celery diced

1/4 cup red onions diced

1 cup pecans (candied, see below)

1/2 cup currants or raisins

Mix salad ingredients together in a large bowl. Add the dressing and fold together well. It tastes better

To make the candied Pecans - put the 1cup of pecans in a small skillet and dry cook for a few minutes until hot. Add the maple syrup, it should steam, and mix well. Take it off the heat, dump onto wax paper to cool and store in a mason jar.
