Creamy Mashed Potatoes with McDougall Golden Gravy

Mashed Potato Recipe

2lbs Yukon Gold potatoes

1 tsp garlic powder

1 tsp onion powder

1/2 - 3/4 cup unsweetened soy milk (Not vanilla flavored)

salt

pepper


Wash, scrub, rinse and cut potatoes into quarters put in a stockpot of cold water as you are cutting Put the pot with the potatoes and cold water on cooktop and bring to boil. Let cook for 12-15 mins until you can split with a fork with very little effort. Drain potatoes in a colander but dont rinse them. Put potatoes back in the stockpot and simmer on very low heat for a few minutes while stirring to get out excess water. Pour potatoes into mixing bowl. Add garlic and onion powder. Use an electric whisk on lowest speed and pour milk into potato mixture gradually until potatoes are creamy. Add salt and pepper to tasted. Serve and top with fresh parsley, chives or scallions.

Starch Solution Golden Gravy Recipe (Page 248)

Preparation Time: 5 minutes Cooking Time: 10 minutes Servings: makes 2 ¼ cups

1 ½ cups vegetable broth

½ cup water

3 TBS soy sauce

½ teaspoon onion powder

1/4 cup brown rice flour


Place the broth and water in a saucepan. Stir in the soy sauce and onion powder. Bring to a boil. Add the brown rice flour a tablespoon at a time and stir in well. Cook and stir until thickened.
