High Protein Bagels

Recipe by Mrs. Slim on Plants
Ingredients
140g Vital Wheat Gluten
140g All purpose flour
2 tsp baking powder
1/4 tsp sea salt
150g (1 serving of PBD Recipe) Soy Greek Yogurt
1/3 cup + 1 TBSP water (adjust as needed)
Everything Bagel seasoning
Some spray oil (optional)
Directions:
Add all the dry ingredients to a bowl and whisk together until well combined.
Add the vegan soy yogurt and water. Using your hands, knead the dough until it comes together. Be careful not to over-knead. Dough will be a little sticky but shouldn’t be too wet.
Lightly flour a clean countertop, then transfer the dough onto it. Divide the dough evenly into 4 parts. Shape each piece into a round ball by gently pressing down. Use your finger or a spoon to create a hole in the center, then stretch the dough outward to form a bagel shape. Don’t worry if they’re not perfectly shaped—rustic is good!
Optional Step - I like to drop them in boiling water 30 seconds each side
Lightly brush the tops of the bagels with avocado oil, then press on some “Everything Bagel” seasoning or any toppings you like. (If you dropped them in water first, you wont need the oil, the water will cause the seasoning to stick to the bagels.)
Transfer the bagels to your air fryer basket. Bake at 375°F for 13–15 minutes, depending on your air fryer model. If you don’t have any air fryer, Pre-heat Oven to 375°F and bake for 13-15 minutes, depending on your oven.
Once air-fried, place the bagels on a cooling rack and let them cool completely for at least 15 minutes. Then slice, toast, and enjoy with your favorite toppings!
