Easy Cauliflower Bites with Ranch Dressing

Coating Ingredients
1/4 cup Greek Style Yogurt
1/4 cup plant milk
1 tsp Apple cider vinegar
1/3 cup corn starch
2/3 cup all purpose flour
1/2 tsp - 1tsp cayenne pepper
1 tsp garlic powder
1 tsp paprika
1 tsp salt
1 tsp black pepper
1/3 cup nutritional yeast
1/3 cup panko breadcrumbs
1 head of cauliflower cut into florets
1/2 cup primal kitchen buffalo sauce
Dressing
2/3 cup Greek style yogurt
1 tsp lemon juice
1 tsp garlic powder
1 TBSP dried parsley
1/2 TBSP dried dill weed
1/2 tsp salt
1/2 tsp pepper
1/2 TBSP sugar or zero calorie sweetener
2-4 TBSP plant milk. I started with 2 and added 1 extra.
Directions:
Preheat the oven to 424F. In a large bowl, mix together the dry ingredients. Then add the wet ingredients and mix with a spoon or whisk to combine. Add the cauliflower florets and make sure they are well coated.
Lay our the florets on a sheet pan coated with parchment paper. Space them out so the crisp. Put the oven in the oven and let it cook for 20 mins. Flip over and cook for another 15 mins.
Make the range dressing by combining all the ingredients and whisking together. Store in the fridge until ready to use.
When the wings are cooked on each side, pull them out of the oven and dump them into a bowl. Pour in the 1/2 cup buffalo sauce and make sure to coat all the cauliflower. Put them back on the sheet pan and back into the oven for 10-15 minutes. Once they are done, remove and let cool. Serve with the ranch dressing.
