Garlic Chickpeas with Swiss chard

Ingredients

  • 6 cloves garlic sliced into small slices

  • Plenty of Swiss chard (I used about 12oz)

  • 15 oz. can chickpeas (garbanzo beans) drained and rinsed

  • a few tablespoons of water for sautéing

  • Himalayan salt or sea salt to taste

  • freshly ground black pepper to taste

  • Lemon for sprinkling on at the end and for garnish.

Instructions


  • Remove stems from chard and thinly slice the stems like celery (Seriously!). Set aside. Stack chard leaves, roll, and slice across into thin ribbons.

  • Heat some water in a skillet and set to medium heat. Add sliced chard stems and cook for about 5 minutes, stirring occiastoinally. Next add the garlic and cook for 2-3 more minutes.

  • Add chard ribbons and cook for about 5 minutes, then add the chickpeas and pepper and mix to combine. Let it cook for about 5 mins until everything is hot.

  • Remove from pan. Serve with lemon wedges or sprinkle some lemon juice on top.
