Ingredients
6 cloves garlic sliced into small slices
Plenty of Swiss chard (I used about 12oz)
15 oz. can chickpeas (garbanzo beans) drained and rinsed
a few tablespoons of water for sautéing
Himalayan salt or sea salt to taste
freshly ground black pepper to taste
Lemon for sprinkling on at the end and for garnish.
Instructions
Remove stems from chard and thinly slice the stems like celery (Seriously!). Set aside. Stack chard leaves, roll, and slice across into thin ribbons.
Heat some water in a skillet and set to medium heat. Add sliced chard stems and cook for about 5 minutes, stirring occiastoinally. Next add the garlic and cook for 2-3 more minutes.
Add chard ribbons and cook for about 5 minutes, then add the chickpeas and pepper and mix to combine. Let it cook for about 5 mins until everything is hot.
Remove from pan. Serve with lemon wedges or sprinkle some lemon juice on top.
