High Fiber Protein Bran Muffins

Ingredients
1 cup (120g) whole wheat flour
1/2 cup (96g) Swerve brown sugar replacement
1/8 tsp salt
1/2 cup (122g) unsweetened applesauce
2 tsp (13g) whole ground flaxseed meal
1.5 tsp vanilla extract
1/2 cup (40g) Vital Wheat Gluten
1 tsp baking soda
1 cup (58g) Wheat Bran (or ground up FiberOne Original cereal)
1.25 cups (300ml) plant milk
Directions:
In a bowl, mix together the dry ingredients.
Add the rest of the ingredients. Mix well to combine into a muffin batter.
Pour into muffin tins with paper liners, and bake in a preheated oven at 350 degrees for 20-25 mins. Muffins should have tops that bounce back and toothpick should come out clean.
Let cool to room temperature and serve
This recipe makes 9 servings.
