High Protein Beans and Veggies

Ingredients:

  • 1/2 (55g)  white or yellow onion Diced

  • 3 cloves garlic (9g) grated

  • 1.5 cups (150g) TVP

  • 1.5 cups (150ml) of HOT water

  •   1 tsp vegan Worcestershire sauce

  •   1 TBSP dried minced onion

  •   1 tsp garlic powder

  •   1 tsp onion powder

  •   1 tsp paprika

  • 1 15oz can kidney beans

  • 1 cup (63g) Snow Peas

  • Mushrooms optional

  • 2 tsp Chili powder

  • salt and pepper to taste


Instructions:

In a mediums size bowl, add the HOT water along with the Worcestershire sauce, garlic powder, onion powder, and paprika and mix together.  Add the TVP to the bowl, mix well, and let sit for about 10 minutes to rehydrate.


To a skillet on medium heat, spray a dash of spray oil and add the yellow onion, and grated garlic.  Let that cook for a few minutes until the onions start getting soft and then throw in the rehydrated TVP.  Stir and sauté for a bit until the TVP starts looking like its a little darker and cooked.  Add the kidney beans, snow peas (or whatever veggies you are using), mushrooms, chili powder and stir fry until everything is hot.


Serve and enjoy
