Instant Pot Refried Beans (Vegan, Oil Free, Starch Solution)


1 lb dry pinto beans (rinsed clean)

1 med onion diced

4-6 garlic cloves

4oz can hatch chilis

1 tsp chili powder

1 tsp cumin

1 tsp salt

6 cups water


Set Instant Pot(IP) to sauté. Add a few tablespoons of water. once the steam starts, add the onion and garlic. Add water as needed so they dont burn. After the onions are soft, about 5 mins, turn off the IP. Dump in the rest of the ingredents. Stir, put the cover on, lock lid in place and set to "sealing" position . Cook manual, high pressure, 35 mins. Let steam release naturally. Drain out about 1/2 cup to 1 cup of liquid. Puree beans with a stick blender. Dump into container for fridge. The beans will appear runny but they will thicken in the fridge. Reheat in microwave and serve hot.
