1 medium red cabbage roughly chopped
1 1/4 tsp sea salt
2 large carrots grated
1 Granny Smith apple, unpeeled and grated
1 1/4 cups low sodium veggie broth
1/4 cup apple cider vinegar
1 1/2 TBSP reduced sodium Tamara or soy sauce
1 TBSP organic brown sugar or coconut sugar
1/2 cup dried sour cherries
1 tsp crushed red pepper flakes
2 tsp white sesame seeds
Select saute on IP. After a few minutes toss in a few tablespoons of water to saute with. add the cabbage, half of the salt and cook, stirring occasionally until the cabbing begins to turn brown, about 5 minutes. Add water 1 TBSP at a time if needed
Top the cabbage with the carrots, apple, broth, vinegar, Tamara and brown sugar, cherries, pepper flakes and the rest of the salt. Stir well to combine. Press cancel on the IP.
Secure the lid, set to sealing position, Set to cook manual high pressure for 3 minutes.
Perform a quick release when done
Open the pot an taste for seasonings
Transfer to serving dish. Store in fridge for up to 5 days
