Ingredients: • 3/4 cup low fat powdered peanut butter
• 2 TBSP low sodium soy sauce
• 1 TBSP rice vinegar
• 1 TBSP maple Syrup
• Juice of half a lime
• Pinch of ginger (Just a tiny bit, it’s very strong)
• Water to rehydrate PB powder (Start with 1/2 cup and go from there)
Peanut Dressing Directions: Add all ingredients except water to a large measuring cup or small bowl. Add the water starting with 1/2 cup. Start mixing with a spoon (Not a whisk, it will get too gummed up). Add more water a tsp at a time until you get to the desired consistency. For using as a dip for spring rolls, you want it a little thick. For using as a dressing for a salad, you want it a little thinner. This is amazing on spring rolls or a Thai salad.
