No-Bake, Low Fat Bird's Nest cookies


24 ounces dark chocolate chips (no dairy)

2 cups chow mein noodles (the dry ones in a blue bag)


Melt chocolate chips in a double boiler on the stove or microwave at 30 second intervals until melted. If using microwave, dont let the chocolate seize up. The double boiler is the best option. Add the melted chocolate to a large mixing bowl. Add chow mein noodles to the melted chocolate and carefully combine until noodles are well-coated with the chocolate. Use two tablespoons to put the mixture onto two sheet pans with parchment paper and allow to cool for a few hours. Top with decorations if desired. Serve or store in an airtight container.
