Ingredients:
1/2 cup cashews (soaked in filtered water for 2 hours and then drained)
OR
1/4 cup PB2 Cashew Powder
1/8 cup filters water
2 1/2 TBS fresh squeezed lime juice
3 TBS filtered water
1-3 garlic cloves
A chipotle chili from a can of chipotle chilis in adobo sauce
1 tsp of the adobe sauce from the can
1/2 tsp of sea salt
Directions:
If you are using the cashew powder, whisk together with water to get a cashew butter consistency. Add more powder or water as needed to get that consistency. I had to use a stick blender to get it right. Add all the other ingredients into a blender along with the powder cashew mix and blend until smooth, about 45 seconds. This dressing will thicken overnight.
If you are using whole cashews, add all ingredients to a blender and blend until smooth. You may need to add more water to get it smooth. Let sit overnight and add to your favorite salad.
