Oil-Free Home Fries / Diner Potatoes

Ingredients

1-2lbs of cooked yellow potatoes (I air-fryed them the day before)

1 red pepper

1 yellow onion

1-2 TBSP Soy Sauce or coco aminos

1/2 tsp onion powder

1/2 tsp garlic powder

1/2 tsp dried parsley

1/4 tsp dried thyme

1/4 tsp paprika

A pinch salt

pepper to taste

1 TBSP nutritional yeast

1 small bag of frozen broccoli already steamed and ready to serve.

Your favorite cheese sauce (If not using for Mary's Mini)


Direction:

Cut potatoes into bite sized pieces. Slice and dice pepper and onion into bite sized pieces. Heat a skillet on low to med heat. Add a few TBSP water to start the saute process. Once the water starts steaming, add the diced onions. Let that cook for about 2-3 minutes and then add the pepper. Mix to combine. Let everything cook for about 5 mins until soft. Add cooked potatoes into skillet and mix well. Add the onion powder, garlic powder, parsley, thyme, paprika, salt and pepper. Stir to combine. Add a few tbsp of water if needed. Use a potato masher to break up the bigger pieces. Stir again to combine. Add the nutritional yeast and steamed broccoli. Mix to combine. Cook for about 5 minutes until everyone is hot and cooked. Add cheese sauce on top if not using for Mary's Mini. Top with additional dried parsley. Serve and enjoy.
