Sweet Potato Hash (oil-free)


  • 6 cups peeled sweet potatoes diced into 1" cubes

  • 1 tablespoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon thyme

  • ½ teaspoon pepper

  • 1teaspoons salt

  • ½ teaspoon paprika

  • 4 cloves garlic minced

  • 3-4 scallions diced (add at the end)

  • 1-2 yellow and/or red peppers

  • 1/2 cup veggie broth

  • 1 yellow onion diced


Peel skin off potatoes and cut into 1 inch cubes. Lay them out in a single layer on an over rack and cook at 425F for 45-50mins. Let cool a bit after they are done. In a saute pan over low-med heat, add a bit of broth and then the onion, garlic, peppers and any veggies you are using. Saute for 5 mins until the onions are translucent. Add broth as needed so it doesn't burn. After 5 mins, add the spices and stir to activate and combine then cook for 1 min. Add in cooked sweet potatoes and stir until combined. Once everything is heated, add in the diced scallions and sprinkle some pepper on top. Plate up and serve hot.
