Ingredients:
3 & 1/2 cups filtered water (split into 2 1/2 cups and 1 cup)
2 cups raw cashews (soaked for 2-4 hours if not using a high speed blender)
1 TBSP fresh lemon juice
1 tsp paprika
1 heaping tsp garlic powder
1 heaping tsp onion powder
1 tsp salt
2 oz can/jar of Pimentos
1/2 cup nutritional yeast
Directions:
In a high powered blender put 2 & 1/2 cups of water, cashews, lemon juice, paprika, garlic powder, onion powder, salt, whole jar/can of pimentos and nutritional yeast. Blend to a smooth, creamy consistency, about 2 minutes on high if cashews weren't soaked. Pour mixture into a saucepan and turn to low/med heat. Add last cup of water. Stir constantly for 10-20 minutes or until thick and starting to bubble. It should be nice and thick, like nacho cheese. Stir constantly to avoid burning. Serves: 15-20
