Tim's Minnesota Cucumber Salad

3/4 cup of Starch Solution Mayo (recipe below) (or any low fat mayo)

1/4 cup vinegar

1/4 cup sugar (or any type of sweetener. I used maple syrup)

2 cucumbers "striped" and sliced thin

1/2 red onion sliced

1/2 white onion sliced

some milk to cover cucumbers (optional. This is not in the original recipe)


Add all ingredents to a bowl and mix well. Cover and put into fridge overnight for the flavors to mix. Alterntatly, you can add some plant milk to cover the cucumbers, but the idea is for the mayo to use the juice from the cucumbers to mix together. If you do you use milk, scoop the salad out of the liquid with a slotted spoon to serve. Otherwise if you are not using the milk, serve by spooning some into a bowl.

Starch Solution Mayo recipe:

12.3 oz package of shelf stable tofu (not the refrigerated one from the cooler)

1 1/2 TBSP lemon juice

1 tsp organic sugar

1/2 tsp salt

1/4 tsp dry mustard

1/8 tsp white pepper


Combine all ingredients in a food processor until well blended about 30-60 seconds.
