Tofu Scramble

Huge portion for only 400 calories


Ingredients

1 block 16oz tofu, pressed

1 onion diced

2 TBSP Nutritional yeast

1/4 cup plant milk

1/2 tsp turmeric

1/2 tsp paprika

1/4 tsp sea salt

sprinkle of black salt


300g broccoli florets chopped

100g frozen peas

100g frozen corn

200g fresh tomatoes


Directions:

In a sauté pan on med heat, add a bit of water and toss in the diced onions. Sauce until onions are translucent and soft. crumble tofu into the pan and mix until combined. Cook for about 5 minutes and then add spices including the two salts. Stir to combine and cook for a minute. Add the plant milk and stir until it is absorb. This is the base recipe and at this point, if you break it into three parts, its 195 Calories each. We broke a third off of this for Lexx and then continued on. If you dont do that and just split the whole recipe into two, then each serving is 500 calories.


Add tomatoes, broccoli and cook for a few minutes. Add peas and corn and stir to combine. Cook for about 2-3 minutes. Turn off heat and dump onto plates. This is a lot of food for the calories.
