Ingredients
3-2-1 dressing (see recipe below)
15 oz can red kidney beans, drained and rinsed
15 oz can pinto beans, drained and rinsed
15 oz can black eyed peas, drained and rinsed
1 cup fresh or frozen corn
1 large red or yellow bell pepper, diced
1 red onion, diced
salt to taste
black pepper to taste
3-2-1 Dressing
6 tablespoons balsamic vinegar
4 tablespoons Dijon mustard
2 tablespoons maple syrup
Instructions
Combine all ingredients in a large bowl and mix together. Serve immediately or refrigerated overnight. Serve cold.
