Oil Free Bean Salad


  • 3-2-1 dressing (see recipe below)

  • 15 oz can red kidney beans, drained and rinsed

  • 15 oz can pinto beans, drained and rinsed

  • 15 oz can black eyed peas, drained and rinsed

  • 1 cup fresh or frozen corn

  • 1 large red or yellow bell pepper, diced

  • 1 red onion, diced

  • salt to taste

  • black pepper to taste

3-2-1 Dressing

  • 6 tablespoons balsamic vinegar

  • 4 tablespoons Dijon mustard

  • 2 tablespoons maple syrup


  1. Combine all ingredients in a large bowl and mix together. Serve immediately or refrigerated overnight. Serve cold.
